CHEMEX BREWING GUIDE

THIS RECIPE IS FOR 30g COFFEE AND 500ml WATER

The Chemex can bring out the best in every bean – an expression of your passion for great coffee.

Ingredients

  • Chemex
  • Filter Papers
  • Kettle
  • Thermometer
  • Digital Scale

Instructions

  1. Open the filter paper and place it into the Chemex, making sure the 3 layered side is on the spout of the Chemex, this aids in avoiding air to escape through the spout.
  2. Rinse the filter paper with plenty of hot water, this will wash out any papery flavours from the filter paper. Once fully rinsed and the Chemex has warmed, discard the water out.
  3. Place the Chemex on your digital scale.
  4. Pour the 30g of ground coffee into the Chemex and tap to level the coffee bed, zero your scales.
  5. Start the timer as you pour about 90g of water just enough to cover the coffee bed, the goal is to evenly wet all the ground coffee. Wait 30-45 seconds, this stage is called the bloom.
  6. Once the coffee blooms, slowly pour in the rest of the water in concentric circles back and forth. Keep pouring until you’ve reached 500ml of water, aim to reach this weight by around 2 minutes.
  7. After approximately 4-5 minutes, all the water should have drained through the coffee and your brewing is finished. Discard the filter paper and give the Chemex a good swirl. Pour the coffee into a cup and enjoy!

Pro Tips

You can use a needle or a toothpick to even out and remove clumps from the coffee bed in your Chemex. Carefully by placing the end of the toothpick in the coffee bed and moving across it to break up any clumps. You can also make a small hole/well in the centre of the coffee bed to channel your water flow through the ground coffee, only about 1-2cms deep. When you start pouring your for your bloom, aim the pour into this well . This will make the water easily saturate all the ground coffee. Right after pouring the water for your bloom, swirl the Chemex once or twice to ensure all the coffee grounds are saturated with water. After the last pour, gently swirl the Chemex to level the coffee bed for an even extraction.
